Making Perogies

In a 2 cup measuring cup put 1 1/2 cups of warm water plus 1/2 cup vegetable oil. In a bowl put 6 slightly heaping cups of flour and 1 tsp salt mixed. Make a well. Pour about 1/2 cup of water/oil and mix. Continue mixing in about 1/2 cup at a time. You will need to get another 2 cups of warm water ready and continue to mix in 1/2 cup at a time until dough forms. Dough should feel like the skin on the top of your hand and when you pinch it, it should have an elastic consistency. Cover with a lid and set aside while you make the filling. Fry up some margarine and minced onion, and boil some potatoes. When potatoes are done, add the onion, some salt & pepper, and a few spoons of cheese wizz - then mash. Roll out small sections of dough so it doesn't dry out while you're making the perogies. Make sure to put a piece of plastic wrap between each layer. Boil then lightly fry in butter and onion.
